Scarpaccia RECIPE
INGREDIENTS
Batter:
1 cup all purpose flour
1/3 cup corn meal (not corn flour like in the video!)
2 tbsp olive oil
1 cup water
1/2 tsp salt
1/2 tsp black pepper
2-3 zucchinis
1-2 onion
Extra virgin olive oil
1/2 tsp salt
fresh basil
METHOD:
Cut the onions and zucchini and onion into thin slices and saute in a pan for around 10-15min on medium heat. Set aside and prepare the batter. Combine Flour, corn flour, olive oil and water. Mix and then add the vegetables. Season with salt and pepper. Pour everything to a generously oiled baking tray (to make sure it doesnstick, use baking paper) and pour some more corn flour and olive oil on top.
Bake in a preheated oven at 200C/400F for 35-40 (or more if needed) mins until golden brown and crunchy 🙂
